Hope everyone is having a successful week. I'm not doing a very good job at sticking to P1 this week. I found out that I really need to make sure I get enough sleep at night. I've been staying up way to late and then getting up so early, I end up kind of grouchy and really not wanting to follow any kind of diet. I'm a lot more perky this morning. I went to bed at 9:30 instead of the usual midnight.


b: 1 egg w/ feta and spinach


s: nuts


l: salad w/ chicken


s: mozz stick


d: grilled hamburger patties w/ veggies and cheese


s: plain yogurt w/ splenda and almond butter

Hey Sara - LOL.. thanks for asking! I did a sort of bastardized version of your idea and my favorite way to cook green beans. I sauteed some onions til carmelized then added the spinach and green beans. Then I added a little bit of lemon juice, and sprinkled a generous amount of real parmesan cheese on top (not the powdered kind). It looked totally disgusting! But it turned out pretty tasty. Even my DH liked it, and he hates spinach. I think I might use the rest of it in an omelette or quiche. Although I've never had greenbeans and eggs.... Hmmm...
