This is my first post on this board--just have to say first of all it's been so great reading all the posts here and has been a big help for me! I'm just starting week 5 of the SBD now. I only lost about 2 lbs in Phase 1 and I followed it very closely! Was a bit frustrated to say the least. But now...I guess it's true that Phase 2 is the weight loss phase b/c I'm up to 10 lbs lost!!

I discovered a fabulous recipe while I was home visiting my parents for Thanksgiving (I only had one piece of this full fat/sugar version I swear! ;) But it was so yummy and I modified it for the SBD so I could enjoy (one piece per day). I hope you all will too because it's super easy! I thought I would post it to make sure it's sbd friendly, so if anyone thinks this it is not--please let me know!! :)

Strawberry "Pretzel" Salad
(I use pecans instead of pretzels in the crust)

CRUST

2 cups crushed pecans
3/4 cup melted butter (Land o Lakes light)
3 tsp sugar (substitute)

FILLING

1 (8 oz) cream cheese (light)
1 cup sugar (substitute)
1 medium size Cool Whip (Lite or Free)

TOPPING

1 (6 oz) box strawberry Jello (sugar free)
15-20 oz fresh or frozen strawberries
2 cups boiling water

Mix crushed pecans, sugar, and melted butter.
Press into a 9 x 13 glass dish. Bake at 400 degrees F
for 8 minutes. Cool completely.

Mix together cream cheese and sugar until smooth.
Fold in Cool Whip. Spread on top of cooled pretzel
crust.

Dissolve Jello in boiling water, add frozen strawberries
(water will melt them) Let stand for 10 minutes.
Pour mixture onto cream cheese layer. Refrigerate for 2 hours.
