I just can not seem to get my head around phase two - so sorry for all the dumb questions. I "subscribe" to South Beach online. I see a phase two meatloaf recipe. the oatmeal - is that still supposed to be the old-fashioned slow-cooking kind?

Also, we don't drink alcohol AT ALL.... What can i replace the 1/2 of dry red wine with?

Ingredients
1 can (6 ounces) no-salt-added tomato paste
1/2 cup dry red wine
1/2 cup water
1 clove garlic, minced
1/2 teaspoon dried basil leaves
1/4 teaspoon dried oregano leaves
1/4 teaspoon salt
16 ounces ground turkey breast
1 cup oatmeal
1/4 cup liquid egg substitute
1/2 cup shredded zucchini

Yes, about the oatmeal...all grains on South Beach need to be the most unprocessed "whole" variety, the type that is the least stripped of fiber and nutrients.

I have never in my life added liquid to a meatloaf recipe. Weird. But if you feel it needs something, I'd add some beef or chicken broth.

This is how'd I'd alter that recipe:

1 can (6 ounces) no-salt-added tomato paste - personally, I'd just use the salted kind, but make sure it doesn't have added sugar
1/2 cup dry red wine - omit
1/2 cup water - omit
1 clove garlic, minced - I'd make it 2-3, but we like garlic!
1/2 teaspoon dried basil leaves - increase up to 1 tbl
1/4 teaspoon dried oregano leaves - increase to 1 tbl
1/4 teaspoon salt - increase to your taste. I'd probably add 1 tsp depending on if I used the salted tomato paste or not
16 ounces ground turkey breast - as is
1 cup oatmeal - as is
1/4 cup liquid egg substitute - I use eggs for meatloaf. Usually 1, or 2 if it looks dry.
1/2 cup shredded zucchini - good, more would be fine. Other veggies such as mushrooms and carrots would also be good.

The liquid is actually used for a sauce that goes on top on the meatloaf.

Ahhhh... no wonder I was confused! LOL. I never put sauce on top of mine, but I have seen that ketchup-y glaze that people do sometimes. Thanks for clearing that up for me! In that case, I think you could definitely substitute beef or chicken broth for the wine (and water).
