Im making taco's!! Of course from scratch with some WW tortilla's instead of shells. Home made guacamole with extra tomatoes. Homemade "refried" beans made from smashed pinto beans....ummmm cant wait to get home. LOL!

My dinner last night was vegetables (onions, peppers, green beans and zuchinni) grilled on a cast iron skillet, with a touch of balasmic vinegar and feta cheese added. I was so good that I didn't even want anything else.

Tonight, we're having steak -- my first time grilling it on the George Foreman grill -- and sauteed veggies. DH and the kids will also have the leftover brown rice. But I'm skipping the rice since I'm doing P1 for a few days.

Just decided to have tuna burgers for dinner tonight. I'll have to wing the recipe to leave out the breadcrumbs, but maybe I can use parm cheese instead. DH and the kids will have theirs on WW buns, and I'll have mine on a bed of greens with a tangy yogurt dressing.

From the SB Diet Cookbook, eggplant stuffed with lean
ground beef. And then I'll just use the rest of the ground
beef to make meatballs and mashed potatoes for the rest of
the family. I have a big head of red cabbage that I'm not
sure what to do with -- any ideas?

Here's an idea for your cabbage:







No-Carrot Cole Slaw







Serves 2

Ingredients
1/8 head red cabbage, shredded fine
1/8 head green cabbage, shredded fine
1/2 orange bell pepper, core and seeds removed, shredded
1 celery stalk, shredded
2 tablespoons water chestnuts, chopped fine
1/4 cup kosher salt (be sure to use kosher salt—regular table salt will make this recipe too salty)
2 tablespoons low-fat mayonnaise
1 teaspoon ground white or black pepper

Instructions
Using shredding blade of food processor, shred cabbages, pepper, and celery. Spread shredded vegetables on a cookie sheet lined with paper towels and
generously sprinkle with the salt. Cover with a second cookie sheet and
weigh down with heavy cans for at least an hour (overnight is fine). Remove weights and top cookie sheet and squeeze out vegetables by hand before transferring to a bowl. Toss with water chestnuts, mayonnaise, and pepper. Enjoy.


Or the famous Weight Watchers Cabbage Soup:


3 c. tomato juice
1 c. water
1/2 med. green pepper, chopped
2 1/2 c. cabbage, chopped
2 ribs celery, chopped
1 c. mushroom stems & pieces
1 pkg. beef bouillon
1 pkg. chicken bouillon
2 tbsp. onion flakes
1 bay leaf
Salt & Pepper to taste


Combine all ingredients and cook until cabbage is tender.
