Question from hubby re: wheat flour

My husband is doing SBD with me and he has a question -
He enjoys a "breading" on elk meat and wanted to know if we could use wheat flour to make a slight breading on our elk meat? I wouldn't make it thick, just enough to give him the breading taste he likes. If this was ok, should I count it toward one of our two carbs for the day since we just now entered phase two?

There's not enough of the flour in the dusting on meat to count as a whole grain serving.
