i am starting phase 2 tomorrow and i like a breakfast that is grab and go.

i was thinking of making the P2 approved oat muffins, and having one for breakfast for a few days, otherwise sticking to the P1 eating plan for the rest of the day.

what do you think? alos, i was thinking of maybe having it with a tbs of peanut butter?

ohmigosh every bite of that muffin was heaven....

but now my belly feels kinda weird. strange..i didn't even really notice not having bready things this past two weeks but its like my body's saying WHOA WHAT IS THAT?

still, oat muffins=very delicious.

LOL! I hear you although I thought my stomach should feel a little weird after I was feeling decadent enough to eat 3. LOL! Now, as soon as they are cool enough, I get them in the freezer as fast as I can. I doubt that they are as healthy when you eat half a batch of them. ;)

Welcome to the world of Phase 2!! I have only been here for about 4 days myself but the food is delicious. The muffins sound great. Did you use a recipe on the board? I have been eating a piece of whole wheat toast with PB on it and that has been a pretty quick breakfast for me. I'm sure the muffins are easier though after they have been made. Maybe I will make some this weekend for next week. :o)

i used the "wholesome oat muffin" from the south beach diet cookbook, which i bought myself as a reward for surviving the two weeks.

we dont have a toaster at work so i need something i can just grab and go. so i froze the muffins and just grabbed on this morning. then nuked it in the microwave so it was nice and warm. a little PB, some coffee with splenda and lowfat milk.

but yes, the belly is definitely confused.
