*FYI* The Basic Almond Sponge Cake Rocks

I just had to share... The basic Almond Sponge Cake recipe is to die for. I added a little butter extract and it was like eating a mock yellow cake. I can not wait to pick up some fresh strawberries, because I think they would be sooooo yummy on top with a little whipped cream. This is by far my favorite SBD Dessert Recipe! I highly recommend it! :)

Oooooo, I'm totally trying this this weekend.
Scully - do you think this would work baking it in a loaf pan? My son wants a train cake for his birthday, so I'm trying to find recipes that will work in a loaf pan that are SBD friendly (almost all of the adults at the party are Beach'n). Each loaf cake will be a train car (still working out how I will decorate them).

I am not a pro at baking, but I think this recipe needs to be done in a shallow pan. All of the crushed almonds kind of sink to the bottom and it is mostly the egg mixture that rises. I am going to try using a 9x10 baking dish instead of a jelly roll pan next time. I probably wouldn't try anything smaller than that because the almonds might just be to dense in the servings and the mixture may not really rise.
Someone did a jello cake not long ago and their child loved it. Maybe something like that is an option... If it were me, I would make a 1 pound cake in a loaf pan or buy one, so I am not as tempted to eat it. I would slice it ito 3 long parts to make the train. Ds can have his cake, you will not have a ton of left overs and the Adults can enjoy their own yummy dessert.

I was thinking about making the Basic Almond Sponge Cake this weekend. It sounds good especially with some strawberries. Do you make the almond meal or buy it? If you make your own how many almonds does it take to make 1 1/4 cups?

Thank you for the idea! I think I'll probably use your suggestion to make the cake train, but then put the train onto the sponge cake made in the jelly roll pan (it can be the "ground", decorate it as such). The kids can enjoy the train and the adults can eat the "dirt".

I didn't measure the almonds before I ground them. I just eyeballed it, so now I have a little left over for next time. :)
Ps. I had it last night with fresh strawberries and whipped cream! It was divine!
I have also found that slashing it with a little bit of Vanilla Torrani Syrup kicks it up a notch. :)

What an awesome idea! I can not wait to hear how it works out. Honestly, I wish I could be there. I have been dying for an "icing slice" of cake all week. DS's cake sounds pretty yummy right about now. :)
