Roasted Broccoli

After all the hoop-la about roasted broccoli, I had to give it a try. And I was underwhelmed. However...the saving grace was the Lemon Hummus I dipped it in and now the whole plate is gone and I don't have any room for dinner. Much better to snack on while I'm making dinner than some of my previous choices. I'd still take chocolate first if I was on a deserted island with only those two things to eat.

I made it yesterday and loved it!!! Definitely making it again. I burned it slightly and it was so good that way.

I like it more than a little burnt! I cook it at 500 and wait til its brown ALL over and getting black at the tips! Then we throw a little salt on it, let it cool a tad, grab the bowl and go watch a movie...really crunchy and salty - way better than popcorn and a great finger food to "pop" while watching TV!
I think most people are afraid too cook it too long, once they see it start to brown a tad, they think its "burning" and pull it out, then you end up with "baked" broccoli, not "roasted"!

I haven't tried it in the oven, but we grilled it last summer and I really liked it. It was "this close" to being burnt. There were a lot of crispy brown edges, so that almost hinted at something fried.

You might enjoy it that way!

It was the lack of Olive Oil -- once I added a substantial amount I became a convert!

how much olive oil do you use? Say with a 16 oz bag? I made it last night and I think I need more olive oil but I am not sure how much.

thanks!

YAY! Another convert!! LOL! We had it again last night too! I am going to try it with some asparagus. I read it somewhere that it was yummy as well.
