okay for Phase 2?

I made this for dinner the other night, a veggie chicken quesadilla. Yum! I've been trying to eat mainly vegetarian, and I think the Quorn products are okay for south beach.
Anyway, I cooked up Quorn naked cutlets ("chicken" cutlets) per directions on the box. Fried up some onions. Took whole wheat tortillas, cooked on both sides, then put some quorn, onions and low fat cheddar and cooked till melted. Served with salsa and fat free sour cream.
Sound okay for Phase 2? I feel I should have incorporated more veggies, but not sure where I could have done so. Suggestions?
