Oatmeal pancakes from SB book - Yummy

Hello,
If you have been wondering if the oatmeal pancakes (that are listed in the P2 meal plan of the SB Book) are any good......well YES they are!
If you don't have the recipe here it is:
1/2 cup old-fashioned oatmeal
1/4 cup low-fat cottage cheese
4 egg whites (I used 2/3 a cup of egg substitute)
1 teaspoon vanilla extract
1/4 teaspon cinnamon (I added a little more because I love cinnamon)
1/4 teaspoon nutmeg
Put it all in a blender and blend until smooth (only takes about 30 seconds)
And wah lah, you have 'pancake' batter :-)
This made about 4 good size pancakes. I spread on a little smart balance and then poured on some sugar-free syrup. Very yummy and filling!
Enjoy :)

I just found this recipe on www.allrecipes.com (http://brunch.allrecipes.com/az/tmlPnck.asp) and I was interested in trying it. But on this website it says that it's optimal for phases 1 and 2. Is that correct? With the oatmeal I didn't think it would be ok for phase 1, but the recipe was submitted to the website from SBonline directly. Thanks for your help!!
Beth
Hi Beth,
Oatmeal is listed as one of the "foods to avoid" for Phase 1 in the SB book. You are not supposed to have any startches at all during P1.
But look forward to them for P2 :)
Hi Beth,
It doesn't actually
Thanks for your help. I really am looking forward to these on Phase 2. And I don't mean to make an issue of it, but on allrecipes if you scroll down to the note at the bottom of the recipe it does say "This recipe is optimal for Phase 1 or Phase 2 of the South Beach Diet." It's just a little misleading.
Thanks again!!
Beth
Hi Beth,
You're welcome!
