questions RE: carbs and portions

Hi, I am hanging in there. Bare with me while I list my meals and snacks today so I can get some feed back. Breakfast: 2 eggs omelete with cup raw spinach added, handful shredded cheddar cheese from a bag (not low fat), 1 slice turkey bacon, 8 ounces V8 juice, 2 cups of coffee with skim milk. Lunch: Romaine salad with olive oil and balsamic vinegar dressing, 1 ounce feta cheese, 6 ounces V8 juice, 1/2 cup chick peas, 1/2 avocado, tomatoes, 1/4 cup walnuts. Snack 1/2 cup plain nonfat yogurt, handful of raw almonds, romaine salad with low fat ham and feta cheese, ranch dressing. Dinner: red onions, broccoli and kale sauteed in olive oil and garlic, 3 ounces chicken breast and yes, more feta cheese (each time about an ounce), Dessert: sugar free fudgie with teaspoon of natural peanut butter.
So, am I eating too much? I am also working out every day and drinking over a liter of water. I also have a metallic taste in my mouth since yesterday. Any reason why? Am I supposed to make sure I get a certain minimum of carbs per day or not worry about it? I felt very spaced out at work today--kind of wobbly. I quit last time at day 10 because of feeling so crummy. I really want to hang in there this time. Any advice would be welcome. Thanks! --Bernadette
