If they aren't mixed in with eggs, I can't stomach vegetables at breakfast.
Now that I'm at phase 2 is it OK to drop the 1/2 cup of veggies on the days when I enjoy oatmeal or yogurt?

You need to get 4 1/2 cups of veggies in each day in all phases.
