Case of the Mondays--Phase 2 Check IN

Well here we are, Monday already. What a busy week ahead. Well I must remember to take the time to prepare and eat my sbd friendly foods. Letting myself get too hungry and not having sbd foods available sets me up for a trip to McDonalds or any other fastfood restaurant out there.


b: coffee, 2 eggs w/ spinach, red & yellow bell pepper, feta and 2 links of turkey sausage


s: lite baby bell and a v8


l: chicken wrap w/ veggies and cheese ( ate breakfast too late yesterday and ended up eating a lean cuisine at 3pm)


s: lite baby bell and a v8


d: Mexican pizza ( I did buy my grill yeserday and we ate grilled steak and shrimp, Mmmm)


s: sf popsicle and maybe a slice of my peanut butter chocolate pie I made from the sbd cookbook.

I hear you on the issue of being busy, then getting overly hungry and being more tempted for some thing quick/not healthy! That is my biggest weakness. Happened this weekend - dd had professional pictures taken yesterday with her dance group. So by the time we got hair/make-up done, costumes on, all ten 3-5 yr olds organized, waited for the photographer, did the shoot, etc. It had been about 5 hrs since I had last eaten, plus A LOT of stress. Her dance studio is at the mall, so all the mom's & kids went to the food court for lunch after the shoot. I couldn't turn it down as I was starving, but our food court is pretty limited (pizza/pasta, Hot Dog on a Stick, 2 Chinese places, 1 Mexican) I was tired, stressed, overly hungry, around a bunch of other people eating junk...I caved. Well sort of, I think I did okay, I had grilled fish tacos and pinto beans from the Mexican place. But I did eat the corn tortillas. They just looked SO good at that point! Not the end of the world I guess, I did resist the chips and just ate my salsa plain!

Today:
breakfast - Kashi waffle, yogurt w/peanut butter
snack - soy milk shake (chocolate soy milk, ice, banana)
lunch - turkey wrap on ww tortilla, cut up veggies w/hummus
sanck - apple with peanut butter
dinner - Stuffed Zucchini, green beans, salad
desert - ? probably sf ff pudding tonight

Good Morning Tricia:

Do you keep a journal of what your eating???????????? I find that what helps me get thought the day without worrying if its SB friendly or not.I mentioned in yesterdays post about the Alexia French Fry product.

I had a very bad cold last week & a didn't exercise at all and now that I'm on the mend I going to get started with my walking tapes as its too windy to walk along our beaches.

My menu today is:

B- mozz,& tomato sauce in a cucumber boat, Tea
S-V8
L-veggie soup with chik(soy)patty sticks floating in soup.
S-Pastrami slices
D-tomato & parm on Egglant slices along with mixed veggie melt.
Dessert-s/f jello

Tomorrows W-I so I want to eat on the Phase 1 Level.

I'm starting Phase II today, and I am so excited! I only lost 4 lbs. on phase 1, but I've been doing Atkins for about 14 months (stalled for the last 6 months), so my eating was basically under control, and I didn't expect a big loss. I'm good with 4 lbs, and if I can eat fruit and ww bread and still lose weight - that would be awesome! I had oatmeal this morning for breakfast, and even the overcooked stuff here at the office was good (but tomorrow I'm making my own!). I ate a LF mozz stick with it, which I think was the right thing to do - not just eat it alone.

I had another cheese stick for an a.m. snack, and for lunch I'm having a big salad with lots of veggies and some crabmeat on top. I'll have some skim milk mid-day for a snack, and I'm not sure about dinner - DH does the cooking, but he knows the rules.

Wow, your meals today sound so creative! Good luck on the walking tapes. I didn't have it in me to exercise today. I should have but I just came home and am doing laundry and homework. I live on the third floor so going up and down to check on laundry and then carrying that

Congratulations Lora! and welcome to Phase 2. We like to check in on a daily basis just to keep us on our toes and to visit a little if time permits. If you have any questions we're all eager to assist. Sounds like you are a wonderful success story. Keep up the great work!

Stuffed Zucchini

6 zucchini
1lb lean ground beef or ground turkey
1/2 cup onion chopped
2-3 clove garlic
1 can diced tomato
1/2 cup oatmeal (whiz in blender or food processor til powdery)
1 egg
1/4 cup parmesan cheese
1 T Italian seasoning
1/2 jar tomato sauce
1 cup mozzarella cheese

Blanch whole zucchini in boiling water about 5 min. Cut in half long ways and scoop out middle (I reserve some, chop it and add to my filling). Brown ground beef or turkey with onion and garlic. Mix together meat mixture, canned tomato, oatmeal, egg, parmesan, Italian seasoning. Stuff into hollowed out zucchinis and put into shallow baking pan (this recipe usually fill 2 9x13 pans for me). Top with tomato sauce and mozzarella cheese. Cover and bake 30-40 min, uncover and bake 10 more min, until zucchini are tender.

(my kids call these "Zucchini Boats", so when I serve them to the kids I stick a tooth pick in them with a little flag on it, so they really do look like boats! Gotta make it fun for them to eat healthy!)

Hi Everyone!

I had a cheat meal today and it was WAY worth it. My weigh-in was today and I stayed the same as last week (no surprise there) and I have a feeling my cheat might freak my body into a loss. Seems to happen that way sometimes with me, as long as my cheats are few and far between. We shall see! Gonna P-1 it tomorrow and the rest of today...

B: Turkey and cheese roll-up, V-8, 1/2 banana, diet Dr. Pepper, yogurt
S: None-- ate breakfast late and lunch early
L: (My Cheat): California Pizza Kitchen: BBQ chicken salad (NOT SB-friendly, but oh-so-yummy!) and 2 slices of BBQ chicken pizza, raspberry iced tea

S: mozzerella stick, V-8
D: salad with grilled salmon on top with BV dressing, milk

Yummmmm....I LOVE CPK! I often find the same thing happens to me, I lose MORE in the weeks that I have one big "cheat" item.
