Terrific Tuesday Phase II Check-in

I've only been here a few weeks, so I hope I'm not stepping on any toes by starting this thread. I just have time now to check-in, so want to get it done.

I was down 1.5 lbs vs. yesterday this morning. Still up from Phase I, but we're moving in the right direction. I'm sticking with 1 bread and 1 fruit for another week, and then I'm moving up to 2 no matter what the scale says Monday morning.

Today's Menu
------------
B - fruit smoothie
S - celery w/bc dressing, cheese stick
L - big salad with crabmeat, lots of veggies, some sort of beans
S - 7 reduced fat triscuits w/1 tbsp. natural PB, skim milk
D - leftover taco meatballs, roasted brocolli
S - SBD layered pumpkin pie w/pecan crust

Hi Everyone!

Thanks Lora for posting this thread. It's such a lifesaver for me-- keeps me honest! ;-)

I had a Mother's Day brunch at DD's preschool this morning that could have been disastrous (lots of muffins, pastries, chocolate, fruit dip, juices...), but I was really good and just had a few strawberries and grapes and a cup of coffee.

B: Strawberries and grapes, small cup of coffee
S: Diet Dr. Pepper
L: Pear and blue cheese salad with pear dressing, ww burrito with ff refried beans, lf Mexican cheese, salsa, lf sour cream
S: Red bell pepper, hummus, yogurt
D: Tuscan skillet supper, roasted green beans, salad with homemade vinegarette dressing
Dessert: FF/SF chocolate pudding

No exercise today.

Can you share the recipe for the pear and blue cheese salad and dressing? I've noticed it a couple of times in your menu, and it sounds interesting.

Hi Lora: Thanks for starting the thread. I was here this morning and couldn't find it. Big congrats on your weight loss, you're doing great, adding carbs back slowly is the key.I maintained at W-I today as I lost 2lbs last week,took my measurements & I lost 4" all around.

My menu today is:
marg & spreadable fruit on WW toast 1/2 c 1% milk for tea
applesauce
l/c pizza with WW pizza munchies and a huge salad with dress
yogurt
salad with dress. veggie chilli on WW roll, Bowl of veggies
yogurt

Of course you are not stepping on anyone's toes. First one to the site in the morning should get this thread going. I need this or else lord knows what would happen to me!~


I'm really, really getting frustrated. I've been watching what I eat (occasional slip up but nothing too major) and I've been exercising really good and I still weigh 2 pounds more then when I started!!! Ugh! I know, keep at it. I'm just venting.


b: nothing, just coffee today


s: lite baby bell cheese and V8


l: lean cuisine whole grain meal with a small bowl of veggie soup


s: lc cheese spread on rf triscuits


d: grilled cheese and veggie soup.


s: sf popsicles.

Hi Lora! Here's the recipe for Blue Cheese and Pear Salad. It's originally from the Cooking Light- Light and Easy Menus cookbook and I modified it to be SB-friendly. I really like it a lot-- I'm a salad freak so I'm constantly trying out new ones. This one is yummy!!!

1 large pear, peeled, cored, and coarsely chopped
2-3 Tablespoons white wine vinegar
1-2 Tablespoons olive oil
1/2 teaspoon freshly ground pepper
1/4 teaspoon salt
8 cups salad greens
1 Red Bartlett pear, sliced (I use Bosc pears simply out of preference)
1/2 cup crumbled light blue cheese

Combine first 5 ingredients in a blender; process until smooth (I add olive oil/vinegar as needed here because it's a little hard to get the pear to process and I just tweak it until it tastes right).
Place salad greens on individual plates. Arrange pear slices over greens and top with cheese. Drizzle dressing over salads. Yield: 4 servings.

Hi Andrea! I'm always trying new recipes because I got into a major food rut and thought it would help keep things interesting. I went through a lot of my cookbooks and found recipes that either were already SB-friendly or that could easily be modified for the SBD. Then I categorized them and am trying new ones all the time. It's been a fun way to try new recipes and it has gotten me out of my eating rut too. When I first started this diet, I felt really restricted, but now I feel like the sky's the limit (well, mostly anyway ;-))!

Thank you! I'll try this over the weekend. I've got enough fruit that I need to eat between now and then. This sounds wonderful! I'm always looking for something new to try.
