Question about chicken marbella
| Wed, 05-11-2005 - 8:44pm |
My boss is having a dinner for Nurses Day & the menu is chicken marbella (I'm probably not spelling it right) & I'm not sure if its sbd friendly. She told me that the ingredients are olive oil, olives, & capers with chicken but I'm not sure if she's leaving out other ingredients that may/may not be sbd friendly. Anyone have any idea what it is & if its sbd friendly? I did a search & came up no matches (maybe due to my spelling?)
All the other dishes are non-sbd friendly so I'm hoping its legal for me :)
TIA!
Doreen

Hi Doreen,
Do you mean Chicken Marsala?
I did a google search & came up with this list of ingredients:
Chicken Marbella
From the Silver Palate Cookbook
4 chickens, 2 1/2 lb. each, quartered (my boss will be using breasts)
1 head of garlic, pureed
1/4 c dried oregano
salt and pepper to taste
1/2 c red wine vinegar
1/2 c olive oil
1 c pitted prunes
1/2 c Spanish green olives
1/2 c capers with a bit of juice
6 bay leaves
1 c brown sugar
1 c white wine
1/4 c chopped parsley
Not exactly sbd friendly :(
Whats a gal to do? Everything else is even more illegal for me! Hmmmm, hope no one gets their feelings hurt if I don't induldge in the foods. Maybe I'll eat before hand & "sample" here & there (?)
WWYD?
Also, how terrible would it be if I had a lemon martini? Am I just pushing my luck with the lemon martini since the dinner isn't sbd friendly?

Doreen,
If it weren't for that cup of brown sugar.....
Oh, well.
My thoughts exactly . . . darned brown sugar! My boss is having the office nurses to her house for dinner, which she's making. Unfortunately, after hearing all the other choices (appetizers, entrees, & desserts), nothing is sbd friendly. Somewhere, somehow, there's an ingredient or two thats nonfriendly (like the brown sugar). No one in the office is sensitive/diabetic to sugar (unlucky for me).
Positively though, I can/will eat dinner beforehand (her dinner starts at 7pm) so that should help. I'm going to drink lots of fluids (water), take some fiber supplements before going, & hopefully I'll be strong & not give in to temptation!
Wish me luck! Thanks for the help!

Just do the best you can and have fun.
she's your boss - you don't want to insult her. and she's making the food for you. i would be careful the rest of the day and be careful the following and just do your best at dinner. eat, but don't overeat. it sounds like she's going to great trouble for this dinner and she really wants to show her appreciation. what can you do? eat a lot of salad if you can. i would just deal with it -- you can't stop your life. (if it was a friend, they would know about your sout beach diet and it really wouldn't be an issue)
just my two cents.
