hey guys! i picked up a low-carb cookbook because im obsessed with cooking healthy food now!! he is one of my favorite chefs on the FoodNetwork, George Stella. A lot of his recipes call for heavy cream?? is it ok if i use this? or should i be using milk because i know heavy cream has fat in it. also has anyone ever had eggplant in stir-fry or sauteed it? lemme know what you thought. thanks guys!! x0x

Hi Kerry,

Heavy cream is not a good choice on South Beach.

Hi Kerry,

There are lots of low-carb cookbooks out there but not all of them are SBD-friendly because of the fat content. You are right in thinking that the heavy cream is not allowed. You can use milk or even fat free half and half. I made soup the other day that called for heavy cream and I used FF 1/2 & 1/2 and it came out great.

I have not used eggplant in stir fry before, but I would imagine that you would have to add it to your pan earlier than any other veggies because it would take longer to cook.
