Question of the day:

What is your most common strategy for adapting your "old" recipes to being SBD friendly? Do you: substitute more whole wheat/whole grain ingredients? Lower fat content? Something else?

My most common substitution is to replace carbs with whole grains where possible, that seems to open up a lot of my old recipes right off the bat to being SBD-friendly.

Today's menu:

B: Ricotta pancake to go (ricotta, SF Maple syrup, imitation butter extract, vanilla, 1 egg, mix well and microwave until egg is cooked....I had to do it without the egg this morning because we ran out, in which case it's good cold or heated for 30 seconds to take the chill off).
S: 4 oz yogurt
L: Broiled eggplant steaks, baby carrots
AS: peanuts
D: Avgolomeno soup, asparagus spears, grilled cheese for TG
De: Possibly SB peanut butter cookies

Lots to do today...some grocery shopping, wash the car, working on repainting my bedroom (the kids were wrestling/pillow fighting on my bed and made a big 2ftx2ft hole in my bedroom wall...so what's a mom to do? We fixed the hole, so now we'll have to repaint, so then of course we needed new bedding to go with the new wall color, then of course we need a new headboard to go with the new bedding, hmmmm, then maybe a new dresser to go with the new headboard LOL!) Dh thinks I put the kids up to making the hole just so I could redecorate! Dd has dance class tonight til 7pm, so its leftovers for dinner, yeah - no cooking!

Breakfast: Kashi waffle, pb yogurt
snack: turkey & string cheese
lunch: ? probably a SBD frozen meal I pick up at the grocery store this morning
snack: apple w/ peanut butter, soy shake
dinner: leftovers - Eggplant Lasagna, zucchini, barley risotto
desert: pudding or fudgscicle

So - off to excercise, then heading to Home Depot for paint! Excited, I LOVE painting and redecorating! :-)

Wow, sounds super busy! Usual day for me - work and then school tonight (yuck!) Luckily, my semester is almost over! Here's what I have for today:

B: Oatmeal w/ 3/4c. skim milk, small banana
S: Cheese stick
L: Romaine lettuce, grilled chicken, pico de gallo, hot sauce, black beans, shredded cheese.
S: Probably some nuts
D: Turkey cutlet, roasted zucchini, and sauteed cabbage w/ turkey bacon (my fave!) Cup of plain FF yogurt w/ vanilla extract.
S: SBD PB cup.

Good morning. Kept dd out of school today to have a little fun. Taking my mom and friends to breakfast shortly and then who knows from there.

QOD Response: I usually reduce the fat - use lf dairy products and replace butter with smart balance. If I can eliminate the grain altogether, I do that. I haven't really started subbing whole grains in recipes, just my toast. Haven't gotten too adventurous in the area of grains, because it could be a downfall for me. I really love my pasta - better to stay away than overdo it until I'm more comfortable.

B - fruit smoothie, oatmeal
S - cheese cubes
L - salad w/crabmeat
S - SBD peanut butter breakfast bar
D - grilled chicken w/mushrooms, roasted brocolli, salad
S - SBD PB cup

Hi Shan: I looked this time, not to have two check-ins. Wow!! That a great question. Lets see I love looking at old favorite recipes in my cookbooks and I do make them SB Friendly.I do subsitute ww grain ingreditents and I do go low fat and I also add splenda to recipes that use sugar. I just posted a recipe that I found on the net, to another message board,and its so simple.

Spinach Salad

handful of fresh spinach leaves
1 sl red onions
1 4 oz can of button mushrooms,drained
1 oz of toasted almonds
with apricot mustard dressing
mix together
1/2 tb s/f apricot preserve
1/2 tb mustard
1/2 ts olive oil
Throw over salad==================================Enjoy, MaW

My menu today is:
b= low carb blueberry muffin,with marg & spreadable fruit 1/2 c milk for tea
s=v8
l=2 l/f Hot Dog on 2 WW rolls with saurkraut,relish, Spinach Salad
s=Berry Parfait[blueberries, with l/c blueberry flavored yogurt
d=salad with v.f., German Meatballs,with Spetzel, Peas, Green Beans with Saurbraten Gravy
dessert=Apple sauce in a oatmeal cup.

"I find that cauliflower really does work in just about any recipe that calls for potatoes."

I'm going to have to try this! Potatoes are one thing I've never missed on the Beach, I've never been a big fan to begin with, but TG and Munchkin both love them. Maybe sneaking cauliflower into potato recipes is a win-win solution! I know they both like the faux-tatoes, but it never occurred to me that that could be a semi-universal substitute.

Now I'm thinking New England Clam Chowder with faux-tatoes.....

QOD...Since I became diabetic, I have been substituting regular sugar with Splenda in all my recipes, and Sugar Twin to replace the brown sugar. Since SBD, I have also gone to the low fat dairy, and the whole wheat breads.

This is the second full week of my fitness program, and got in my hour of exercising today. I booted my time on each machine an extra 2 minutes, and 2 extra repetitions on the strength training. Felt pretty good when I got done...going again tomorrow!

My menu for today:

B-Old fashioned oatmeal w/1% milk/2 slices turkey bacon/1 slice ww toast/coffee/V8/water.
S-lf string cheese stick/red grapes
L-tuna salad wrap w/ww tortilla/diet sunkist
S-yogurt
D-large chef salad w/ranch dressing/8 oz. 1% milk
S-apple w/pb
Water..water..water!
Gonna take Maggie's advice and incorporate more grains into my menues.

Hi Everyone!

B: Scoop cottage cheese, 1 slice ww toast with Smart Balance

S: Diet Dr. Pepper

L: 2 turkey and cheese roll-ups, banana "shake" (made with SF/non-alcoholic Kahlua DaVinci syrup-- was soooooo yummy!)

S: 3 oatmeal cookies, apple with LF provolone cheese, milk, V-8

D: Leftover portobello mushroom "pizza", salad with BV dressing, broccoli

Dessert: Fudge bar

QOD: I substitude olive oil for vegetable oil and Smart Balance for margarine or butter all the time. I also omit things that aren't SB-friendly in recipes (like white potatoes and corn) and substitute for more SB-friendly foods (other vegetables, for example). I look through recipes and think of how I can convert them-- makes this WOE interesting and fun! Great question!
