New to Phase 2 - Questions

Today was my 2nd day on Phase 2. I made the mistake of weighing myself this morning - 1 of the lbs that I lost on Phase 1 has returned, but of course it could be a fluke. I'm going to pretend I didn't weigh myself this morning, and refrain from weighing myself until next Monday.
Here is my menu from today:
Breakfast: Scrambled Egg Beaters with Red & Green Bell Peppers and Onion
Morningstar Farms Veggie Sausage Patty
1/2 C steamed skim milk with Espresso and Sugar Free Syrup
Snack: 15 cashews
Lunch: Cantaloupe
Small salad with FF Feta, Egg White, Onion and Red Wine Vin. Dressing
1/2 C Tuna salad with onion and egg whites (no bread)
Snack: 1/2 SBD meal replacement bar
Dinner: Grilled Salmon
1/2 C Green Beans
1 C Skim Milk
Snack: String Cheese
First of all, is 1/2 SBD meal replacement bar too much to have as a snack? I wanted to try them, but I don't want to actually replace a meal with a bar -- not enough for me.
Also, I have a carb competitor question -- are there any "mainstay" carb competitors? For example, would you recommend having some Fiber One paired with my serving of fruit? Or is there some other carb competitor that is good to use any time you need one? I'm not sure I understand the concept of a CC, but I will also revisit the "Getting Started" section.

I can't address your question about the SBD bars, but I may be able to help with your carb competitors.
Carb competitors are things that help slow down the digestion/absorption of the carbs into our systems. There are 3 basic types: acidic things (like vinegar in dressing), fiber (think more along the lines of Metamucil) and fat.
Two fat-types that are often mentioned as going well with fruit are LF cheese or natural peanut butter. Since Fiber One is a cereal, I think it may count more as a carb itself, so a different carb competitor would need to go along with the fruit. (If I'm wrong, I know a CL will correct me, so we'll both learn more about carb competitors.)
Also, one of the links on the GETTING STARTED post back in Phase 1 does a good job of explaining carb competitors. Check back there for more help.

Thanks guys! That is really a big help for me. I don't actually have the SBD book, I have the "abridged" version with all the foods listed, as well as the cookbook.
I wanted to give the meal replacement bars a shot, but they're not "great". I probably won't make them a regular staple in my diet.
