Has anyone made the SBD mac n cheese recipes successfully? I see two recipes.... just wondering if they've been tested, and are they easy to make?

I have made this recipe a few times and it was very good! I do make a couple changes...I use a total of 2 cups liquid (1 c ff evaporated milk and 1 cup ff milk) I use 2 cups total of cheese (1 cup reduced fat cheddar, 1 cup queso oaxaca - a mexican cheese similar to mozzarella) I didn't add broccoli. And after mixing the pasta w/the sauce, I put it in a casserole dish and baked it at 350 for about 20 min.
It turned really well, my kids loved it. I make a big batch every other week or so for them to have a side dish.
Better Mac and Cheese
Ingredients:
2 T. smat balance
2 T. corn starch
½ c. fat-free evaporated milk
2 c. fat-free milk
¼ tsp. black pepper
1 tsp. Worcestershire sauce
1 tsp. dry mustard
6 oz. reduced-fat cheddar cheese, shredded
8 oz. whole wheat dry pasta, cooked according to package directions
1 c. broccoli florets, steamed (optional)
Instructions:
In large saucepan, melt margarine over low heat. Add corn starch gradually, while stirring constantly with a whisk. Cook for 1 minute.
Continuing to stir constantly, add both types of milk in a gradual stream, forming a white sauce that is smooth. Add pepper, Worcestershire and dry mustard. Add cheese and stir until melted. Stir in pasta and broccoli (if using) and serve immediately.

I occasionally have some of my kid's "Annie's WHole Wheat" mac and cheese. Not sure how legal it is, but I think it's a better choice than Kraft with white pasta. As I said, only occasionally, and always a half cup or less..:)

Just want to be sure that the only changes you make are in the liquid and cheese -- you use slightly less (2c vs 2.5c in recipe) total liquid and slightly more (16oz vs 14oz) cheese. I need something besides the boxed m&c for the kids. I'm pretty sure 2 of the 3 will eat this, and the one who'll turn up his nose will either learn to eat it, or go hungry when it's served. lol (He's 13 yo so he can always make something for himself -- he won't actually go hungry.)
Also, since the second cheese you use is a mexican type that's similar to mozz. can I just use mozz. and get (pretty much) the same results?
