Carb Competitors - how much time??

Just another Carb Competitor question...
Should you eat it before, after (or during, I suppose) you eat the carbohydrate food? For example, if I'm having Strawberries, and I'm balancing it with String Cheese, should I start with cheese, then eat the berries? Or vice versa, or eat the cheese in the middle of the berries?
Also, on occasion I've eaten some fruit, and 15-30 minutes later I've remembered that I needed a Carb Competitor with that, so I'll go back and have some peanut butter, or something like that. Is that useful? Or is it a waste to try to slow the digestion of the carbs after 15-30 minutes has passed. Is it too late by then?
Just some CC timing clarification. I'm slowly working my way through the book, so if it's in there, I haven't gotten to it! :) I don't remember seeing that in the "Getting Started" thread.

I think that the idea is to eat the 2 things together, but that together is dependent on both your preferences, and also the type of foods you're eating.
Using your string cheese as the carb competitor, there are many variations on "together": eat one then the other; alternate bites, etc. If you use peanut butter as a competitor, it can be spread on many things (not just bread) and then the two things are being eaten at the same time.
In regard to eating the carb/starch and then remembering a competitor, I'm thinking that the closer together the two are eaten the better. For myself, if it's been too long, I would be afraid of setting off a binge of eating whatever was handy for the rest of the day.

I don't think it matters, as long as you eat one right after the other, at least.
