Ideas for quick and easy dinners for one

DH is going to be travelling quite a bit over the next several weeks, and on the nights he's gone (only 1-2 per week), I'd like to make easy dinners for myself. TV Dinners would be ideal, but I'm not to excited about the salt content. I just don't like spending a lot of time cooking for myself, plus I'll be on my own with the boys, which can be challenging some evenings. :) I know of some good carry out options, but would rather not mess with going out and getting something each night. Any ideas?

I am not thinking of a particular recipe. But, what I have started doing is buying the packs of boneless chicken breasts and ham. When I get home from the super market I separate them, one breast or slice of ham in a small ziplock. That way, when I want something for myself - I can pull out one slice of ham from the freezer w/o having to defrost the whole the package.

Try the gazpacho recipe. If you use canned tomatoes, the only prep is 5 minutes of chopping vegetables and a quick whirl with a hand blender.

When I am cooking for one, I usually have salads, whole wheat pitas with turkey or turken bacon and veggies, flat out flat bread pizzas, or the precooked chicken breast that can be microwaved.
