I am getting ready to start Phase II Tuesday. To be honest, I know that I'm not getting enought veggies. I do eat them with lunch and dinner, but there is no way that I'm getting in 4 cups a day.
In all honesty I only like broccoli, squash, cauliflower, and green beans. And only cooked. The texture of raw veggies (literally) makes me gag and puke. And there is no way I can eat that much veggies (more than a cup) at one sitting. I can sometimes choke down salad...but only iceberg or romaine.
Any suggestions?

A few more thoughts for you....
You can roast or grill almost any vegetable, including those you listed. I like to coat them in a little olive oil and garlic salt then roast or grill. When cooked, I sprinkle with a little balsamic vinegar and a shaving of fresh parmesan.
Also, whenever I grill or roast veggies, I make sure I have plenty for leftovers to add to omelets.
