Saturday Phase II check in!!

This day has been a little bizarre..

Breakfast was- kashi cereal, skim milk, V8, and veggie sausage

Snack- 1 TB peanut butter

THEN I realized I had an eggplant I needed to use before it spoiled, so I came to the message boards. After looking through recipes not only did I end up with an eggplant lasagna, I also now have a batch of no bake oatmeal cookies!! lol So then:

Lunch- 1 serving of eggplant lasagna and 3 SB oatmeal cookies(oops, I got excited)

Anyway dinner will be a very tame salad in the city(veggies, grilled chicken, and no dressing to make up for all the oils at lunch). That evens things out, right!?

I'll also have coffee or a latte with skim milk to keep me going through the shift. Oh, and I'll throw in a fruit from a vendor at some point!!

That's it for now. I'm so full. I hope everyone has a nice weekend!

I am just so, so excited to be back in MY kitchen with MY food! We went to WalMart this morning and spend like $300 stocking up since were out of everything from being gone on vacation (hopefully that will last one week LOL, but probably not!)

So today I am having all my favorites:

breakfast: Kashi waffle, peanut butter yogurt
snack: none
lunch: Gardenburger on ww pita, roasted green beans
snack: soy milk shake w/banana
dinner: pork chops with dijon "gravy", asparagus, brown rice pilaf
desert: ff sf pudding and berries

Thanks for starting the sat check in thread. I W-I this morning an there was a stall,so heres to next week.

Catherine-your menu sounds great, have to look in the recipe section more often. The eggplant Lasangna sound delish.............

MichaelAnn-Welcome back from your vacation.Wow you must really have run on empty. Three Hundred Dollars worth of stuff,Imagine the price if you didn't shop at Walmart. That my second home, there all the time.

my menu today is:

B=Micro Apple Melt1 c 1% milk for tea

S=V8 with celery stirrer

D at Noon=sweet & sour chicken with veggies 2 veggie egg rolls

S=1c chocolate flavored 1 % milk

Supper= Pork's Nightmare rolled up into a sandwich.

Dessert=Strawberry Bowl

Actually we spend about $250 on an average week for food, so it wasn't too much more really - *sigh* A family of four (including a 7yr old boy who is a bottom less pit) all eating only "healthy" food adds up quick! I've been trying since day one on this diet to decrease it a little, but I just haven't found a way. I joke that SB is the reason we are moving to TX, I can't afford CA cost of living PLUS eating healthy lol!

Oh man, I feel your pain. I have a family of 6 (4 kids) and you are so right about the 7 yr old bottomless pit! LOL I have one of those too and he kills me!

It is hard to keep any kind of a budget, but I'd rather have a healthy family. I live on Long Island and the prices here are outrageous. And there's no super walmart! I'm in heavan when I visit mom in FL and can shop at hers.

Wow, soup really fills you up! I'm just gonna clock in how I did on Sunday and not bother starting a new thread.(as usual, I just like to post and hold myself accountable)

Today was weird...I slept over in the city instead of commuting home, so I had NO SB food. Trying to be on a budget, this is how my Sunday went.

Woke up at 11:30, so breakfast/lunch: 1 cup spicy black bean soup from whole foods(amazing) with 1/2 a turkey sandwich(whole wheat bread w/ pecans in it)

5:00- What luck!! Pre-shift food was chicken caesar salad instead of waffle fries!!

7:30- had the other half of the sandwich I bought.

10:00- banana

11:30- 2 SB no bake cookies

I would just like to note: this is the first time ever I have NOT finished a sandwich even though it was good--I just was full and didn't need it right that second!
