How do the banana yogurt muffins count?
| Tue, 09-06-2005 - 7:26pm |
I saw the recipe for the banana yogurt muffins and they look DELICIOUS! I'm going to bake them very soon, and I'm wondering how they count in terms of grain servings, fruit servings, etc. I posted this question on the muffin thread itself, but wasn't sure if anyone would read it there, so I'm re-asking it. Rehearsal for the school musical is starting soon, and goes every day till 5:30 so I'm looking for some portable snacks to keep me going all afternoon. Would one muffin be an acceptable snack? Or a breakfast? Help!
Thanks,
Cassie
Thanks,
Cassie

Hi Cassie,
I saw your question on the muffin thread.
Thanks Cathy! I'm so excited to try them. I was never into cooking or baking or anything until South Beach- now, I love looking at the recipe folder and saving the recipes that look good to try. My mom is amazed that I'm finally getting into cooking, because I always used to avoid anything involving ingredients, haha! Just another reason why I love South Beach...

Cassie,
You're welcome.
Hey Gals!
Sorry...that was me that posted that recipe! I had found it in one of my grandmother's old recipe books, and it didn't indicate how many servings it yields! Yipes!
I've made the recipe before, though, and I made 12 small muffins, so I think Cathy's math is bang-on (Go Cathy!!!). I know that MichaelAnn also made the recipe, and I wonder how big the muffins she made turned out?
Sorry I couldn't be a be a bigger help, Cassie! I hope you like them, though! They're pretty tasty!
Cheers,
Stef

Thanks MichaelAnn!!
I think counting two as one serving is a fair calculation. The ones I have made in the past were always small-medium sized, and I typically count them as a half-serving each.
I'm glad your little ones like them, too!! I definitely agree that they're not dry like the other muffins I've made using whole wheat flour. And they're superbly low-fat, which just makes them even better! Haha!
Cheers,
Stef
