Hello...

I have a couple of questions:

1) Is the mock french toast recipe for one person or is it one of those that should serve more than one? i have yet to make it, but i need to know before i make it since i have the habit of eating the whole thing if it is supposed to be for one (or if i think it is).

2) The smart balance spread: is that legal to use? I think it tastes awful, but i use it in the fritata recipe which is delicious. and i want to know if i can put a bit of it on my whole wheat english muffin.

When buying margarine choose those that do not contain Trans Fatty Acids. Smart Balance is OK and so is Fleishmann's Premium Olive Oil Spread.

I am justa little confused. the link you sent me is different than the recipe someone posted in i-village. the one on i-village uses only 2 eggs and the one from the sobe cookbook is 1 egg and 4 egg whites. hmmmm.

so is it poissible the one i have from the message boards is for one?

Just curious - I looked at the Fleshmeinn's Olive Oil spread at the store the other day and it DID have "partially hydrogenated soybean oil" in it. Not enough to have .5g trans fat though, so technically its labeled "trans fat free". Kind of like the Brummel and Brown situation.

Here are the ingredients off their website:
INGREDIENTS: LIQUID VEGETABLE OIL (SOYBEAN, OLIVE), WATER, SWEET CREAM BUTTERMILK, PARTIALLY HYDROGENATED SOYBEAN OIL, SALT, VEGETABLE MONO AND DIGLYCERIDES AND SOY LECITHIN (EMULSIFIERS), POTASSIUM SORBATE AND SODIUM BENZOATE AND CALCIUM DISODIUM EDTA (TO PRESERVE FRESHNESS), PHOSPHORIC ACID (ACIDULANT), ARTIFICIAL FLAVOR, VITAMIN A PALMITATE, COLORED WITH BETA CAROTENE (SOURCE OF VITAMIN A).

I remember looking at it before too and NOT seeing the hydrogenated oils either. Wonder why they would change it? Especially now, with the new label laws starting soon.

Hi-

The mock french toast recipe I use is the one that has been shared on this site, and I eat the whole thing. If I just had half, I would definately not feel full. If you wanted to cut back on calories maybe you could use one egg and one egg white. Otherwise, I think it's ok to use the recipe on this board to serve one.
