How do I incorporate vegetarian meals?

I have been doing pretty well on SBD for the past few months, but I have recently had some health issues that have set me a bit off track. While I am still following SBD, I have a more limited selection. Basically, I am having stomach pain and pressure when I eat. Specifically, when I eat fats (even low fat) or cheese, beef and chicken. So, the GI doctor recommended avoiding most fats (except olive oil) as well as beef and chicken. While I love fish -- I can only eat so much of it! So, I thought that I would add some vegetarian-based meals to my repitoire! However, I'm clueless as to how to incorporate some of these basic vegetarian items. Beans, Tofu, seiten, tempeh...yikes! I also want to make sure that I start with some good recipes so I don't think its terrible and avoid these things as well! I found the links to vegetarian ideas, however, I didn't see anything that specified what catagories these items would fall. Are beans a protein or a starch? Or, a starchy protein?????
Here is an example of some things that I have eaten lately.....
Veggies wrapped in one sheet of rice paper (bok choy, carrots, avocado). (rice paper -- .5 carbs per wrap).
Veggies wrapped in a WW tortilla, roasted peppers, onions, eggplant with feta cheese (that cheese doesn't seem to bother me)
Same as previous, with hummus instead of feta.
I'd like to incorporate some of the vegetarian ideas that I found online, but I'm still unsure. I'm sure that there is information in the book, but I loaned it out to 2 of my co-workers who are starting SBD....since they have seen my hips shrinking!
