Non salad eaters: how to get veggies in?

For the first year I was on SB I was great at eating a big salad for lunch every day. But about 6 months ago, I started to get tired of them, and now the mere thought of them turns my stomach. Without the salads, though, I'm having trouble fitting in 4 1/2 cups of veggies per day. I'm looking for some ideas, particularly lunch, for veggie dishes. I'm not big on munching on raw veggies at snack time, so that's not an option. TIA.

Another idea that works great for me is to buy Green Giant frozen veggies in a box (make sure it's the no sauce variety!), and eat the whole box..it's about 2 cups usually...they are sort of like a selfish splurge since I make sure they all go in my belly, not in the kid's..they get their own box..:) Plus it gives much variety since you can have a different veggie every time. I also love red peppers, so I bought a frozen bag of them and throw them in everything.

I'm not a big salad fan. Occasionally I will feel like a big salad - but most of the time eating salad feels like a "chore".

I have most of my veggies roasted. I roast everything - broccoli, cauliflower, green beans, eggplant, carrots, brussel sprouts, asparagus, zucchini....you name it! I have 2 cups w/lunch and 2 cups w/dinner. My other 1/2 cup is usually in the form of beans at some point during the day, or soup.

Another thing I like to do is use salad veggies and dressing, but not as a salad. I will cut up cucumber, tomato and pepper and then dip them in dressing. It just gives "salad" a different twist (and I can imagine I am having chips and dip LOL!) I do this with my meals as a side, not for a snack.

Other meals that are full of veggies are one dish meals like soups, eggplant lasagne, stir-fries, cabbage casserole, etc.

I also vary things with lots of different types of veggie side dishes like baked tomato cups, slow cooked green beans w/carmelized onions, 3 bean salad, mashed cauliflower, sauteed spinach, etc.
