I haven't checked in in a long time and I need to! So here's my day:

B: cottage cheese and some left over ham from Christmas
S: chocolate pudding
L: cereal w/milk and a small serving of enchiladas I made with bell peppers instead of tortillas... I guess I could call it enchilada unstuffed pepper casserole!
S: SBD hot cocoa
D: a big salad while everyone else had pizza... yeah for me!

I didn't get any fruit in today just because I wasn't really keeping track of what I was eating. I had an IUD put in this morning so I felt crampy and yucky all day. That's why I had to have my chocolate pudding early this morning. LOL!

I have to start off by saying that they weren't *that* good. Since I used peppers instead of tortillas there was nothing to soak up the excess liquid so they were a little juicey. But if you love enchiladas this might be a good fix for you.

I first sliced my bell peppers into strips and lined the bottom of my pan with them. Then I spread some black beans on top of that(you could also use refried beans if you like) then I made a layer of cooked chicken breast pieces that I had seasoned with chili powder. Next I made a layer of lf chedder cheese, then salsa, and then another layer of bell peppers. I topped it off with enchalada sauce and then more cheese. I baked it at 375 for about 30 minutes. If you're in Phase 2 I think it would be much better with ww tortillas instead of peppers. Or you could do both. Also some spanish brown rice would be good in it or on the side.

Thanks nili! I was wondering could wheat tortilla be used to layer? or is there a limit to the wheat tortilla?

That is so funny! June 13 was my due date. There is a June baby board come visit us!
It helps when there are other moms with babies the same age.
