I'm so proud of myself...


Last night I went grocery shopping and cooked up enough food for the next 3 weeks!!


I made:


Chicken Sorrento over brown rice


Chicken fajitas over FF refried beans


Uncle John's Chili


Meatloaf with roasted green beans


Salmon patties w/curry sauce over brown rice with roasted broccoli


I put it all in single servings into that "disposable" tupperware and FILLED my freezer.  There are 30 meals in there!  Yea!  I love it when I do that, then all I have to do is make breakfast and remember my snacks.  I don't get tired of food very easy so this totally works for me.  On days when I don't want one of those options I just make some soup or something!  Just wanted to share...oh yeah, and also, I'm down .5 lbs putting me at 200 exactly.  Only a little more to Onederland!  (maybe on Monday, that's my weigh-in day anyway!)

Okay - I need help! I would love to do something similar right now. We are moving in 2 weeks, I want to freeze some meals in disposable containers so that the last week we can still eat at home even though the kitchen/cooking stuff will be packed up. But I have never frozen meals or food. Any tips? I know you cook everything all the way through before freezing right? And did you use plastic or foil containers? Does it matter? Do you need to cool things all the way before freezing? How do you reheat - oven, microwave?
After working in food service I get SO leary of bacteria, cross contamination, food safety, etc. so I have never been brave enough to attempt freezing. The last thing I need is salmonella poisioning the day before we move LOL - so I want to do this right! Any advise ladies???

My mom has that cook once a month cookbook or whatever so I just read through the first chapter to learn all about freezing foods.

This post inspired me! I spent Saturday night at home by myself cooking for 3.5 hours. I loved the idea of this, so I decided to do the same thing. I live alone, so mine will probably last me a couple of months. I went out and bought several packages of those "disposable" containers, and now my tiny freezer is busting at the seams.

Here's what I made.

Turkey meatloaf, with spinach & lf feta in it

Spaghetti squash and black bean casserole, my own concoction

eggplant lasagna

breakfast veggie quiche bars

black bean soup

hummus

gazpacho (I didn't freeze that one)

Grilled plain chicken breast, cut into strips.

I'm so excited about not having to cook when I finally get home at night.

LOL, my husband might have a slight problem with that! I'd be happy to cook for you anytime though, but only if you don't mind a DIRTY kitchen when I'm done.
