I'm so proud of myself...
Last night I went grocery shopping and cooked up enough food for the next 3 weeks!!
I made:
Chicken Sorrento over brown rice
Chicken fajitas over FF refried beans
Uncle John's Chili
Meatloaf with roasted green beans
Salmon patties w/curry sauce over brown rice with roasted broccoli
I put it all in single servings into that "disposable" tupperware and FILLED my freezer. There are 30 meals in there! Yea! I love it when I do that, then all I have to do is make breakfast and remember my snacks. I don't get tired of food very easy so this totally works for me. On days when I don't want one of those options I just make some soup or something! Just wanted to share...oh yeah, and also, I'm down .5 lbs putting me at 200 exactly. Only a little more to Onederland! (maybe on Monday, that's my weigh-in day anyway!)

"Turkey meatloaf, with spinach & lf feta in it"
Meredith, can I get your recipe for this?
Like many here, I don't usually follow much of a recipe. But I can give you a run-down of what I did. I had seen this post from MichaelAnn for Mini Greek Meatballs, and wanted to try something similar.

Although I don't quite have the patience for all of those little meatballs. So I did a similar meatloaf, inspired by that recipe.
I sauteed finely chopped mushrooms (about 4 or 5) and onion (maybe half of a medium) in some olive oil. When they were tender, I added several handfuls of fresh baby spinach, and cooked all of that until the spinach was wilted.
I then combined all of that with a pound of ground turkey, 2 or 3 oz of crumbled feta, one egg, a few splashes of worcestershire sauce, and a minced clove of garlic.
Put it into a loaf pan and baked at 375 for about 30-40 minutes, I think. It was pretty simple. All of the veggies and feta help to keep it moist, sometimes turkey meatloaf has a problem with that.
Let me know if you try it. BTW, this would be appropriate for all phases. But it you wanted it to "bind" better, you could add some ww flour, ww breadcrumbs, or even some oatmeal.
