Well I'm back again, I was gone for the long weekend on vacation and was extremely busy yesterday catching up at work. I'm back today and back on SBD. I did pretty well over the weekend, but definitely slipped a few times. I'm not really going to call it slipping since I planned on eating that hamburger! lol...well here's my day:
B: Cracked Oat Bran and V8
S: String cheese and a few almonds
L: Maggie's Chili
S: Apple and Laughing cow
D: Probably salmon patties and brown rice and a large salad
S: Banana "milk shake"

Here's how my day is shaping up:
B: PB oatmeal with 1 cup skim milk
S: V8, piece of lf cheese
L: tuna salad over a bed of arugula with balsamic vinaigrette
S: banana, soy milk
D: still trying to come up with something
S: sf,ff chocolate pudding

My first day on P2 - taking it slow!
B - 1/3 c oatmeal w/Splenda & 1/2 c berries, coffee w/skim milk and Splenda
S - Celery w/Laughing Cow, V8
L - Jicama & Black Bean Salad, regular salad with homemade chipotle dressing, 1c skim milk
S - Yellow peppers w/hummus, skim milk cappuccino if I need it.
D - Either Pork Tenderloin Mexicana (poblanos, fire roasted tomatoes, onions, gaahhhlic) or Chix breast with spinach & goat cheese. (Leftovers)

S: celery and motz cheese
L: Ckn Walnut Apple Salad (I made it for dinner last night...it is sooo good!)
S: Black Beans (I know it sounds weird...but I love eating black beans as a snack)
D: Ckn Mushroom Swiss and Salad
D: Jell-O

Not much time to post, but here is how I think my day will go........

This recipe can also be found in the SBD book (this might not be the exact recipe that's in the book...I'm going from memory here, but it's how I made it last night)
This is a P2 recipe.
1 boneless, skinless chicken breast (cooked and shredded)
2 oz. chopped walnuts
3/4 C chopped apple (I used Granny Smith and it was delicious!)
1/4 C chopped celery
1/3 C low sugar Italian Dressing
Mix everything together and serve on a bed of lettuce.
Makes 2 servings

What are you going to grad school for?
For breakfast I had scrambled eggs with turkey bacon and celary.
Early Lunch: I won a free lunch at my favorite Chinese resturant. I had a bite of an egg roll but other than that I was good and had Chicken and steamed veggies. It was pretty good.
Snack: Celary and Cauliflower
Dinner: probably going to throw some Hamburgers on the George Forman. I let dd pick the veggies so it will probably be green beans and brussel sprouts.
Dessert: Cherry Smoothy: Yogurt, Skim Milk, Frozen Cherries and Cherry Jell-O. I had one last night and it was a bit too sweet, but still good.
