Not big on fruits - What to do?

Hi all!
First I just want to say what a huge help this board has been to me. I've been lurking for a while. You are all a huge inspiration for me, and I'm guessing for many other lurkers out there. (Hey, on a side note - does anyone else think the term "lurker" sounds kind of sinister?? LOL)
I have a question regarding fruits. I'm in the early part of P2 and was wondering how important it is to have fruits in your diet? Everything else has been relatively easy for me to follow (adding back good carbs slowly, the carb competitors, even recommended portion sizes) - I just can't get myself to eat fruit! I've never been a big fruit eater to begin with and the thought of eating at least one piece of fruit per day doesn't sit well with me, let alone increasing it to 2 or 3 per day. Can I just substitute with more vegetables, or do I really need to suck it up and include the fruit in my diet?

Here are just a few more thoughts. EVERYTHING tastes great with a little natural peanut butter. How about an apple or banana with peanut butter? Berries are great with a little milk and a sprinkle of splenda OR some Reddi-Whip for a yummy dessert.

Just another suggestion: Have you tried baking any fruits. Baked pears and apples are great with just a little cinnamon on them. It changes the taste and consistency. You could also sweeten a little yogurt with Splenda and put it on top. Makes you feel as if you are eating baked apples with ice cream.
