I made this today...and OMG... they were awesome... Can anyone tell me if 1 muffin is 1 grain serving or is it 2? I ate 2 cuz I couldnt resist...damn they were YUMMY!

Hres the recipe...

These are simple and delicious!

½ cup Splenda
2 cups Whole Wheat Pastry Flour
3 tsps Baking Powder
1 Beaten egg (or 1/4 c. Eggbeater's)
1/8 cup I Can't Believe It's Not Butter
1 cup Fat-free milk
1 cup Mashed, ripe bananas
1 tsp. Vanilla
3 Tbs Dark chocolate chips

Mix dry ingredients. Then pour in wet ingredients and banana. Whisk; add chocolate chips and stir. Bake at 400° for 25 minutes.

Yield: 12 Muffins

After doing the math (which is difficult for me) I figured out that this recipe would make about 9 grain servings.

Cathy, what formula did you use? I have been using 1/4 cup flour = 1 serving because the bags all say 1/4 cup is 30 g. If a serving of flour doesn't equal 30 g, please let me know! I assumed it did since most of the cereals & breads use that size as well.

So by my calculations, there would be 8 grain servings for 2 cups of flour (4 in each cup times 2 cups). If it makes 12 muffins, each muffin would be 2/3 of a grain serving (8 servings divided by 12 muffins). 2 muffins would be 1 1/3 grain serving. :-)

I don't think it matters if it's pastry flour because cake flour, which is very fine, also says 30 g = 1/4 cup.
