PH 2 Questions

Please let me know if I've got this right. I've just started PH 2, and I *think* this is what we're supposed to be eating.
3 servings low fat dairy
1-3 servings high fiber grains
1-3 servings fruit
2 servings lean protein*** unsure about this one
4.5 cups veggies
sweet treats not to exceed 100 cal per day
caffenated beverages not to exceed 2 per day
Have I forgotton/miscalculated anything? Also, I have a few questions:
1. Can dried fruit be eaten?
2. I know bread should be whole-grain and not whole-wheat, but what about pasta- is whole wheat ok?
3. How much cheese can I eat? Does this count towards protein?
