I made the SBD meatloaf for the first time the other day and really enjoyed it, however, I thought it was a little bland. My friend at work puts salsa in hers, but I'm having trouble finding a sugar-free salsa. I know some people add katsup to theirs too. I was just wondering if anyone has some special ingredients that they add to their recipe to jazz it up.

I've never had a hard time finding sugar-free salsa. In fact I have never seen one with sugar added! Tomatoes have naturally occuring sugars. So for tomato products like spaghetti sauce and salsa do not look at sugar grams, but look at the ingredients. If "sugar", "corn syrup", etc. is not listed you are fine even though there will be a few grams sugar on the nutritional information.

This is the meatloaf recipe I use - it has spaghetti sauce, bell pepper, mozzarella cheese, etc. and we've never found it to be bland at all:

1 lb ground beef or turkey
1 cup oatmeal (ground fine)
1 egg
2 cup spaghetti sauce
1/2 onion chopped
1/2 bell pepper chopped
1 T worschestire sauce
garlic
1/2 cup mozzarella cheese

Combine meat, oatmeal, egg, 1 cup of spaghetti sauce, onion, bell pepper,
worschestire, garlic, salt and pepper. Put half in loaf pan. Top with mozzarella cheese,
then other half of meat. Bake, top with remaining sauce last 15 minutes.

Hi there, I do not measure. I use ground, turkey breast meat, tomato sauce, whole wheat bread crumbs, an egg, grated carrots, celery, chopped red pepper, garlic, onion, oregano, basil, pepper. I know the consistency by feel. My cheat is unallowed. i put a mix of molasses and organic catsup over the top, I have always loved the flavor. Don't tell anyone. leila
