My 1st day of P2 - What do you think?

As was discussed in another thread I started, I'm getting an early jump on P2, in order to regain my mojo when running. Please tell me if my plan for today looks okay.
breakfast: Hodgson Mill Multi Gran Hot Cereal w/ Milled Flaxseen and Soy (It's whole grain, 6 g of fiber per serving.) I flavored it with a packet of Splenda, a teaspoon of cocoa powder, a tablespoon of peanut butter, and half a cup of skim milk.
lunch: scrambled eggs w/ spinach, bell peppers, mushrooms, tomatoes, and feta cheese
snack: some leftover chicken breast, bell peppers w/ laughing cow cheese (Is there such a thing as too many bell peppers? I don't think so.)
dinner: grilled pork tenderloin, black beans, salad
dessert: plain yogurt flavored with Splenda and vanilla extract, strawberries.
Does that look okay? Am I missing anything, or is there anything I need to eliminate? Thanks!

This looks good to me -- be sure total portions are:
2 c. dairy (milk, yogurt, *not* cheese)
4 1/2 c. veggies (max. of 1/3 - 1/2 c. beans)

Looks great! You have 1 grain, 1 fruit, 2 dairy and a minimum of 4.5 cups of veggies. No, you can't have too many veggies from the Foods to Enjoy list.
