Please explain to me about dried fruit. Why is it acceptable when raisins are not? I love dried apricots, but have been avoiding them because I didn't think it was okay. Then, I've read other posts where people have them. So, I guess I have more to learn. :)

Raisins are very high on the glycemic index and the concentration of sugars can cause cravings.
I never really got it either, and I'm not good with the "just because thats what they say" reason - so this is my best guess...
Imagine grapes have a medium GI index (I really don't know what it is, but I am assuming its higher than say apples or apricots, still within acceptable range, but on the higher end of acceptable) So when you dry those and concentrate the sugars, they move into the high range. But with fruits that started out lower, while they do concentrate the sugars more - the final number isn't as high. Am I making sense?
I have no idea if this is true - its just a logical guess on my part to try and make sense of what seems like random rules.

You're logic is correct. Raisins have a GI of 64, while grapes have a GI of 43.

The book says to stick with foods that are "lower on the glycemic index'.
Many glycemic index charts don't mention the volume/portion of the food they are applying the rating to.
