I was wondering if this dessert would be ok?  I used to make this all the time but it's been a while.  It's made with skim milk and a bit of artificial sweetener.  Basically, you use an areator attachment and whip the skim milk until it's like whipped cream and then add a little artificial sweetener for sweetness.  You can also add in frozen, thawed strawberries or other fruit to make a great lowfat dessert.  My braun hand blender comes with an attachment for whipping cream and eggs that does a great job.

Seriously? I mean you can actually whip skim milk into something like the consistency of whipped cream? That is fantastic news. I'm no CL, but I don't know why that wouldn't be legal.

That is soooo Cool! I would have never thought it was possible. Is it just how ever much milk you want to whip plus splenda to taste? I've been making my SBD banana split: 2 TBS frozen lite whipped topping, 1 small banana, 20 peanuts, drizzled with unsweetened chocolate (splenda) to taste. Would love to use skim milk instead. I'm assuming I could use a whole cup of it, since it's just legal milk....?

Just be careful because it probably quadruples in volume so a cup of milk makes a lot of the whipped topping.

I did this years ago, but I found out that it's a treat you have to eat immediately. I put the leftovers in a bowl, and they turned back to milk! Maybe it's just my lack of whipped topping skills, who knows. :)

I can't imagine why this would not be legal....and I"m thinking I need to go find my high speed hand mixer! I have such trouble getting my dairy in, and this might just do the trick. Thank you for the reminder.

You could try adding a teeny pinch of cream of tartar - it's a restaurant trick for adding stability to whipped cream.
