I Think I Goofed Up The (Faux)tatoes...

I steamed the cauliflower for four minutes and then put it in the food processor and added everything, but it doesn't seem like mashed potatoes to me.  I'm thinking that it would be easier to cook it straight up and then put it in a mixer and mix it that way.  Is there a reason we should steam it?  It's still edible but the consistency is off.  I think it would taste more "naughty" if the cauliflower was more mushy.  It's still crunchy when I eat it.

I steam mine and I think it takes at least 6 or 7 minutes.

I nuke them and put them in the food processor - but I don't like the SBD recipe so I use Smart Balance and skim milk.

I have found that adding a couple tablespoons of lite sour cream to the recipe really helps!

The first time I made them, they didn't taste any different than real mashed potatoes to me. I used a little bit of low-fat shredded cheese, but otherwise followed the SBD recipe.

The second time I made them, they were so bad I had to throw them out. My husband will eat just about anything, and he likes cauliflower, and even *he* wouldn't eat them.

Maybe that's what I did wrong, not cooking the cauliflower long enough. I'll try it again by boiling them. It's such a nice side when you're going for that "meat and potatoes" dinner feeling.
