I went blueberry picking with the kids & now want to utilize the goods. I found a receipe for Blueberry-Oat muffins but it needs some help. I generally don't bake, especially with artifical sugar, so I'm lost as to how to replace the sugar the receipe calls for.
Here are the ingredients:
1 c all purpose flour (I'll replace with ww flour)
1 c rolled oats
1/2 c sugar (no idea how to replace this or with what or how much)
1 1/2 tsp baking soda
1/4 c wheat germ
1/4 tsp salt
2 egg whites
2 c mashed bananas (about 4 small)
2 tbsp vegetable oil
1 c fresh blueberries
This receipe was the best one I could find besides the sugar. How do you substitute with the artifical stuff? How much? Whats the taste difference?
Anyone make blueberry muffins that actually tasted good & sbd friendly?

Splenda can be
Hi Billysmommy:
If you have to get a response to this could you please share. What a great recipe. I would like to also know how to count it on the plan. For example bread, 1 snack, 1 fruit?
Thank you.
Looking forward to hearing from you
bunnyhop2006,
I would count this as 1 starch serving per muffin & probably 1/2 fruit serving as well. Its a phase 2 food.
According to Karen, you simply replace the sugar with equal parts splenda. Simple! I'll let you know how they come out!
