I use to make eggplant parmesian (that I bake, not fry) alot before south beach, and I used the Progresso Italian Breadcrumbs...so now that I am on SB, and in stage 2, I tried to experiment last night, and hope I didn't do wrong. Instead of the traditional breadcrumbs, I used Whole Wheat Germ and mixed in a little garlic salt and italian seasoning. It turned out great! Is this ok????

Yes, you can use wheat germ in phase 2. What a great breadcrumb substitute idea!
