I tried the eggplant with Extra virgin olive oil and red and green peppers..but it is missing something to make me WANT to eat it more. ANY suggetions? Can I fry it in smart balance or another oil? or bread it with something? I liked it..but not alot. Thanks!

I find that spices always help with eggplant.
YES! That helps a ton. I found it ok..but what I read to put on it wasnt "enough" for me to like it very often.

I added 4 garlic cloves and two tomatos roughly chopped. After it was done roasting in the oven i sprinkled a bit of parmagina-riggiano cheese on it...it was great!

I love eggplant, but as a "background", alone it doesn't have much flavor.
My favorite ways to eat it are as a substitute for noodles in lasagne or as Eggplant Parmesan (I bread it with whole wheat bread crumbs, oven "fry" it, then layer it in a casserole with marinara sauce and mozzarella)

hey all,
has anyone tried moussaka? its a layered greek dish i believe made of eggplant,meat sauce and bechamel. im planning to make it for dinner and it looks like it can easily be adapted to a LF and SB version. probably would be okay for phase 1 too. if it turns out well, ill post the recipe.
