I'm so annoyed today. After dinner, I will have eaten 4 servings of whole grains (all legal) and 2 servings of fruit. I think I'm almost in phase 3 since I've hardly had any veggies. Trying to prepare and plan out of this serviced apartment with a dorm sized fridge is driving me absolutely crazy. I certainly don't want to eat salads everyday. I had a ton of salad last week and I was just sick of it! I don't think I'm going to lose anything this week if this keeps up. I am really finding it difficult to get the veggies in giving my situation. I'm back in the gym this week and I meet with a personal trainer tomorrow so hopefully that will help. I was doing so well, I just don't want to mess it all up! Not having permanent housing is really making this way of eating a pain and it shouldn't be.

Sorry you are feeling so frustrated. It's especially difficult when you WANT to do well and CAN do well, but the circumstances get in your way! Other than the small fridge, you have a stove and other means for cooking, right? How about buying veggies that don't require refrigeration. As long as they are kept in a cool, dry place in your apartment many vegetables should keep. Ideas: spaghetti squash, snap peas, tomatoes, cucumbers, sweet potatoes.
Also, remember that phase 3 does not mean that we limit or reduce our veggies - it just means we don't have to be as strict all the time.

We do have a kitchen, but it's really tiny so it's hard to cook up a alot of meals on Sunday which is totally what we are used to doing. I have some veggies, but it's just hard to prepare nice meals for more than a couple of days. We don't get home until after 6 and sometimes later and there's no way we are going to cook. We would get to bed way to late because we'd be eating late. We're up at 5:45 to hit the gym. Hopefully, we will move into our apartment next week...fingers crossed!
We had leftover taco junk w/ whole wheat pita and my DH picked up a bag of salad mix to go with it.
I know what you mean about phase 3, but this is only our 2nd week of phase 2.
I must say, we are doing quite well given the situation and it's much better than when we were living in a hotel for 5 1/2 months!!!!

Always here to listen to a good vent... ;-) In a pinch I rely on canned veggies, rinsing them off to reduce sodium --
* canned green beans w/ salad dressing is good (add chick peas, kidney beans & chopped onions to make a 3-bean salad),
* heat up a can of baby carrots & sprinkle w/ cinnamon
* canned asparagus tips (warm or cold) w/ a sprinkle of lemon juice
Maybe you can come up with some other ideas...
