Mock mashed potatoes?

Have you ever tried them? and do you like them? The ones made from cauliflower. I'm making ground turkey meat loaf and thought I would try those with it and see what the kids thought. I just don't want to do if there isn't a good opinion on them. TIA!

Well..my husband and I really liked them, but now Ive got more ways to try and cook them! Im off to make some Salmon cakes!!! I guess like I did the cod, but Im going to try something a little different.

They were REALLY good, better then the cod. I even did my own thing with the spices and tried new things then with what I did to the cod. My husband ate 4 1/2! VERY very yummy. ;)

I am almost embarassed to ask this, but I have never used cauliflower on a head before. I bought it though, and want to make the mock potatoes. DO I just drop the whole thing in boiling water, or do I cut the florets off first, or what? I had frozen cauliflower and tried to soften it in the microwave, but it turned out rubbery and some like brownish discoloration happened.

HEY! Dont feel embarrased! Well everyone does it differently, but I cut the florets off and into small bite size pieces, then into a saucpan with a cup of water. I cook it for several minutes (on medium heat)

you could also place the cauliflower on a rack in the pot with same amount of water and cover it so its steamed, I think it takes maybe 10 minutes- once its tender you are done.

Let me know what you think..The other post is right too..you could put it on a rack in a pot and steam it that way too. There are lots of really great ways to cook and eat it!
