Hey, tomorrow is day 1 of PHASE 2! Woohoo! I made it, and the best part is that I didn't cheat at all!! *grin* So, I have a question, I am making a big breakfast tomorrow, and thought maybe I would use my serving of a grain in that. So I was curious if there is a mix or recipe for pancakes that's legal? Also, if not, could I do french toast (just dipped in eggs/milk) from an approved bread and sugar free syrup? TIA!

They are so good that my kids didn't even notice that they weren't the usual white flour kind! CL-Cathy says 1 or 2 would be a serving. Since tomorrow is your first day on Phase 2, I would just eat 1. Add some milk & maybe an egg & you've got a great, filling breakfast!

(Oh & BTW, you could definitely do French Toast. Just remember that 30 grams or 1 ounce is a bread serving.)
