Fiber and low-carb bread

I find bread shopping to be a confusing experience.
I've read on these boards that some kinds of fiber are "real" fiber grams that we can count to determine whether breads and other products are legal, but there are other kinds of fiber that don't actually affect the absorption of carbs into the bloodstream, so don't have the nice blood-glucose mediating properties "real" fiber does.
I hope that made some kind of sense.
Anyway, is there a link somewhere (or does somebody know) the kinds of fiber that don't work for us, and what ingredients to keep an eye out for? I mean, I'm suspicious if something has like 20 grams of fiber a serving but otherwise I don't know what to look for.

So why do the South Beach Diet wraps have oat fiber as ingredient #3 and oat flour as in ingredient #4? Soy protein is also in there too.
To me they don't seem much different than any other product with "added" fiber - other than Dr. A gets a kick back from them.
Of course, I'm a hypocrite because I do buy them and love them. *sigh*

I agree with your frustration about this. I find it hard to criticize Dr. A. given all he's done for me :) but yeah, some of the prepared foods are sketchy.
I looked at a package of the wraps once in the store and made a personal choice not to get them based on the label. However, I should probably consider it a better alternative to a lot of the other stuff out there. So if DH would eat that for lunch from time to time, it would be a move in the right direction. Sorry, just thinking out loud.
