OK... I got such a great response on my yogurt question, I figured I'd tap the well again!

What do you like to put in your oatmeal? I am thinking of trying that as a breakfast alternative...

Here's how I make mine:


1/2 cup Quaker Oatmeal (the long cooking variety)
1 cup skim milk
1 Tbs. natural peanut butter
1 tsp. vanilla extract
2 packets Splenda


Mix all together and microwave for 3 minutes. YUM!!!

I drizzle mine with SF syrup, and sometimes stir in Splenda.

Some things (not all together, mix and match as appropriate):

sf "maple" flavored syrup
cinnamon
nutmeg
banana and chopped nuts
sf- jams
peanut butter
chopped apple
chopped dried apricot
berries
sf syrups (gingerbread, cinnamon or vanilla are my favorites in oatmeal)

My favorite is chopped dried cherries (no added sugar) and walnuts with splenda, vanilla and creamer. I also like fresh strawberries and blueberries.

To get a creamy texture I just put the oatmeal and water (with a bit extra water) in pan, turn the burner on medium, go fix my hair, and come back about 8-10 minutes later and it is ready. Starting everything cold makes for a creamier texture. THen I add a little creamer, vanilla and my spenda, mix it up, top it with fruit/nuts, and pour a little more creamer on. Very tasty.

This may seem like a silly question, but when you use PB does that count towards your nut serving for the day? And is 1 Tablespoon a full nut serving?

I love PB and the oatmeal sounds great, but nuts is one of my easy snacks and I am not sure what I would replace it with if I used up my nuts for Bfast.

2 Tablespoons of peanut butter would count as your days maximum nut allowance.

I bet I am the only person who eats oatmeal savoury! Most ingredients not SBD friendly...but just to give you an idea to think outside the box.

Hey Karen,

I made your version of oatmeal over the weekend and again this morning. I love it and drizzle a little SF maple syrup on it, but it seems like so much. I could not finish the entire serving on either occasion.

Is the recipe you gave 1 serving or 2?
