I made enchiladas for dinner:


2.5 cups Fat Free refried beans (this ingredient is the one I wasn't sure was really "good" for phase 2)
1 lb Lean ground turkey
1 cup reduced fat cheese
1 small can enchilada sauce
1 bag of Whole Wheat carb smart tortillas (12 carb and 7 fiber per tortilla)


IT MADE 12 enchiladas


I ate two of them and boy howdy were they incredibly good!!! Washed them down with two bottles of water (one flavored with some crystal light) and I feel so hunger satisfied. ;-)



Elsewhere today eating wise...


4 scrambled eggs for breakfast
3 chunks crab meat for snack
1 peanut butter turkey cheese stick roll up (sounds gross i Know but wow it's good) for lunch
3 caffeine free diet dr peppers
3 bottles water


All that's left for today is my pudding dessert at 8:30!! woohoo good day I think overall.

Hi -

The fat-free refried beans are fine in all phases.

On your menu for the day - some problems and quite a few things missing. I don't see ANY veggies??? You should be eating a MINIMUM of 4.5 cups per day, every day. I also don't see any dairy? In phase 2 you need 2-3 cups of dairy per day (dairy on South Beach is milk, soy milk or fat-free yogurt)

Also on phase 2 you should be having fruit as well. I didn't see any in your menu. I don't know what week of phase 2 you are on, but in the first week you should have 1 grain AND 1 fruit, in the second week 2 grain AND 2 fruit, and in the 3rd week 3 grain and 2-3 fruit per day.

Your menu was very heavy on the protein - not balanced at all. You need to be eating from ALL the food groups - veggies, grains, fruits, dairy, etc.

TOday is not a usual day - I usually eat a grilled chicken salad for lunch and a south beach diet prepackaged meal for dinner and much on celery stalks too. I am going to have to work to get milk in b/c I generally just don't like it and I got some oranges to add this week but they didn't sound very good today.


I got AF for the first time since my 16 mo old was born and I have not been feeling very well with it.I don't feel like eating at all actually. BLECH.

A berry smoothie is a great way to get in both a fruit and a dairy serving! It may be a good idea to a few choices of fruit around so that you can pick what you feel like. I always use frozen fruit for my smoothies - you can get a huge variety (I always have mango, peaches, berries, bananas in the freezer at all times) and it doesn't go bad so you can keep it stocked up.

Oh my goodness!! I LOVE refried beans, but for some reason, just thought they were not allowed on SB. I haven't had them since I started this WOE. wow, totally missing out!!

Those do sound quite good! But, I'm wondering if the sauce would be okay?
That would have been the only thing I questioned in making the dish BUT with that said, if the rest of my day was going good, I would have 'cheated' for whatever small amt of no-no it would have been.

What Julie was trying to explain is that even if the tortilla package says "serving size = one tortilla", it may not meet the serving size guidelines for South Beach. Our guidelines are one grain serving = 30 grams (1 oz.). This means that if your tortilla
