Hmmm are these no-no's?

They "sound" ok I really really have the urge to make one into a snack.... one of these crepes warmed up then filled with my sugar free 1 g fat 100 calorie pudding cup and topped with blueberries....

Ingredients (in order): milk powder, enriched flour, sugar, water, dextrose, liquid whole egg, butter and salt

"Enriched flour" is a big no-no on South Beach. It means that is it white flour, we only use products that are made with 100% whole wheat flour. Anything with the word "enriched" is a big red flag.

You can make your own ricotta crepes:

2 Eggs or equivalent Egg subsitute
2 Tbspn's Ricotta Cheese
1/2 tspn Vanilla Extract
1/2 tspn Splenda (optional)

Beat the eggs and blend in the other ingredients.
Spray an 8" omelette pan w/ PAM and preheat. Pour
mixture into pan and allow to set as you would an omelette.
Flip over once and continue cooking until no longer runny.
