grilling pizza? topping ideas?

I've been thinking of trying to grill pizza (after reading the raves about this) but I'm not really sure I know how. And I dont know what I toppings to try. My DH is a standard pepperoni and cheese guy but I'm always up for trying something new. So whats on your pizza?

I've never, ever been a fan of "American style" pizza since my dad was born and raised in Italy. So I've never really like the whole pepperoni thing since I was used to the "real" pizza my grandma made at home - and trust me, there was NO pepperoni anywhere near it!

We use zucchini, onion, bell pepper, mushrooms, asparagus chunks, artichoke hearts, spinach, pesto, garlic, pinenuts, etc. But my absolute favorite pizza is Pizza Margarita - a very traditional Naples style pizza. Its just tomato, fresh mozzarella, garlic and fresh basil.

DH loves to grill pizza. He's usually lazy and starts with the Boboli whole wheat crust. We drizzle a little olive oil on heavy duty aluminum foil and grill it on that. The kids prefer sausage (I use turkey italian sausage links and squeeze it out of the casing before browning it). DH likes turkey pepperoni. I prefer veggies--spinach, mushroom, red onion & artichoke hearts. Cathy's pizza sounds really good, think I'll give that a try!

In San Francisco there is a place called North Beach Pizza. They have a Pizza Verde, which is what we started to try to imitate and then morphed into our own creation. We use pesto with minced garlic mixed in, baby spinach, grilled or sauteed onion, sliced mushrooms, low fat mozarella and feta, and topped with thin tomato slices. The kids like tomato sauce with turkey pepperoni and mozarella. Any combination works though, it's really what sounds good to you. My absolute favorite pizza that I would love to figure out was actually in London. It was simple, but the sauce made it. It was just a tomato sauce (garlic and basil I think) with a black olive in the middle. No cheese or anything. If I could recreate that on grilled crust it would be fantastic with a huge salad!

That reminds me of the pizzas in Italy. I loved how they would do like a whole mushroom, sitting right smack dab in the middle of the pie!

So is the boboli WW allowed?


Also, do you just grill te crust with alittle olive oil on it directly on the grill and THEN add the toppings? Are the toppings on it while it grills? Does a charcoal vs gas grill matter?

I've never grilled crust, but I would imagine that you would cook it directly on the grates (low flame). I would put the pizza together with toppings first.

Cook it slowly directly on the grates, which should be sprayed with non-stick spray. There are two ways to do it. Cook one side and then flip it and put your toppings on the cooked side, so the toppings and crust finish cooking together, or cook both sides of the crust and then throw the toppings on and put it under the broiler (2nd rack down so it doesn't burn) for a few minutes until the cheese melts. Our grill is an infra-red, and therefore cooks much faster than most grills, so we almost have to finish it off under the broiler to get the cheese melted and keep the bottom from being burnt. However, most recipes call for doing it totally on the grill the way I described above.

Okay, between this and the other post about homemade pizza, I think I'm gonna have to try it! I've printed out the Amazing Whole Wheat Pizza Crust recipe and plan to make it toward the end of the week. I'll even try grilling it! This should be interesting....I've never made any kind of bread before or had to buy yeast for anything.
